Jackfruit Seitan ("Ribs")

You know how jackfruit has been all the rage as a pulled pork substitute? I recently wondered whether vital wheat gluten (seitan) could be used to bind those fibers together, similar to Veganomicon chickpea cutlets circa 2007. Short answer: Yes, yes indeed. I followed Susan Voisin of Fat Free Vegan's recipe for jacked-up (get it) ribs fairly closely, but with only a small amount of sugar free barbecue sauce to finish instead of lathering both sides. Also... instead of smoked paprika and smoked salt, I used a splash of liquid smoke in the jackfruit and finished these in the smoker. Look at that texture. Chewy, juicy, shreddy (yes yes).
The best thing? A quarter of the recipe, which is quite a bit, clocks in at 208 calories (adjust as per your actual BBQ sauce usage) and 31.5 grams of protein.
